Decadent Healthy Chickpea Blondies
I have such a sweet tooth and this chickpea blondie recipe hits the spot when I’m craving dessert. Chickpeas are high in protein, filled with a variety of vitamins and minerals, and packed with fiber.
Plus, all that’s required is throwing some ingredients into a blender, pouring the mixture into a baking pan, and then baking for a quick 25 minutes. Easy.
This recipe is both gluten free and dairy free, making this sweet treat even more enjoyable knowing it won’t upset your stomach later. Enjoy!
Ingredients:
1 can of chickpeas, drained & dried
1/3 cup peanut butter
1/3 cup oat flour
1/2 tsp pink Himalayan sea salt
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup coconut sugar
1/3 cup almond milk
1 tsp vanilla
3 tbs maple syrup
1/2 cup enjoy life chocolate chunks or chips
Directions:
Preheat your oven to 375 degrees and grease an 8×8 baking dish.
Toss ingredients in blender & mix until there are no lumps.
Add chocolate chips and bake for 25-30 minutes.
Let cool for about 8-10 min before diving in.
